Banana cake

I’m trying to ease myself back into baking as I’ve not done much of it for many months.  For those of you that intend to indulge over Xmas with chocolate logs, christmas pudding and rum cake, try out this banana cake to ease your guilt before the splurge begins.  It counts for at least 1 of your 5 a day surely – very quick to make and soooo delicious.

All you need to is cream togther the following ingredients and spoon it into a 23 x 33 cm/9 x 13 in cake tin and bake in a preheated oven at 180 degrees C /350 degrees F/gas mark 4 for 45 minutes.  The top should be nice and cruchy and your cake springy when you touch it, once finished:

Light and fluffy banana cake

4 ripe banans mashed

2 eggs beaten

350g caster sugar

120 ml oil

5 ml vanilla essence

225 g plain flour

10 ml bicarbonate of soda
